Check out this blog from Dave Draper - http://blogs.alfresco.com/wp/developer/2013/09/04/customizing-the-share-header-menu-part-1 which has 2 other subsequent links.

Hi,
do you mean by customing , adding and removing some elements from the header ? or you're talking about css ?

If it's about css : move to
{AlfrescoHome}\tomcat\webapps\share\js\alfresco\header : and there you can change many css propreties like colors for the menu and the cascading menu
{AlfrescoHome}\tomcat\webapps\share\js\alfresco\logo: there you can put your own logo

If it's about components , then check out the link that M.ujay Pillai gave you .

Regards,
Sofia.
