Customize Modeller by adding forms to stencil

Hi everyone!
I'm currently trying to customize the BPMN modeller present in Activiti Explorer by adding a bunch of CMMN elements.
Is there a suggested procedure for this kind of implementation?
I gather I should start by adding new elements to the stencilset.json file, but I'm confused on the following steps… any help would be welcome.

I created a custom class in the org.activiti.bpmn.model package for each new element… but i'm still at a loss on how to connect this class with the stencil… there's bound to be something I'm missing…

I'm also wondering how it works on Activiti6 because there is no stencilset.json anymore
